A scoop of homemade chocolate ice-cream with a big helping of homemade pavlova with fresh cream.

Whatabout ye folks, it's Lee here.  Back with something a little different for my Craft Blog, so I completely understand if you don't want to watch a video with a recipe for chocolate ice-cream.  But then again.......IT'S CHOCOLATE ICE-CREAM!  Everyone loves chocolate ice-cream.  This recipe has been handed down from my Grandmother, to my wee Mamma and then onto me.  According to my Grandmother, this is a secret family recipe that is not to be shared, lol....but considering I've been making it now for 20 years which is longer than anyone else....I now consider this MY chocolate ice-cream recipe and I think I've earned the right to share it..teehee.......she says bravely.....not one bit worried in the slightest......about the wrath of her 92 year old Grandmother, teehee.

This ice-cream is EXTREMELY rich so you will only need a small amount in your dessert bowl but it is sweet and creamy and so chocolatey.  It's truly divine and only needs 5 ingredients and that's if you count water as an ingredient, lol..  BE AWARE, this ice-cream does use uncooked egg yolks, so only use the freshest of eggs that you trust.  If you don't like the idea of using uncooked egg yolks, maybe this recipe is not the one for you.  We have had this chocolate ice-cream recipe in my family for 40 plus years and it's never made anyone sick ever.  So, for me, I have no problem making it.  And the sugar syrup is boiling hot when the eggs are mixed in, so I assume that probably makes them safe to eat as it does heat them up.  

This recipe is only ever made once a year so has become synonymous with Christmas in my family.  Now, compared to most ice-creams, this is probably deemed quite expensive to make .....particularly as I make double the amount for my large family.  I have a very large family and we have extended family come to Christmas dinner too, so this has to adorn a lot of dessert plates.  This also stretches over a few Christmas period desserts.  So I am sharing the "double" recipe amounts with you which should yield around 3 ltrs of ice-cream (maybe a wee bit more).  However, if you don't need that much, please feel free to half everything in the recipe, but please be precise.  A scale is an absolute must.

EQUIPMENT NEEDED

This is a no churn ice-cream so you don't need to buy an expensive ice-cream machine to make it.  You also don't have to keep going back to it in the freezer to "fluff" it up or churn it by hand.  This ice-cream is simply made, stick it into containers and forget about it in the freezer.  You will need a small saucepan for the sugar syrup, a mixer, hand-held mixer or even just a whisk to whip the cream...but you'll need good arm strength.  You will also need a large bowl to mix it all together. However, you do need a food processor for this ice-cream.  I've never tried making it without one as I feel it's essential to the making of this ice-cream....but at least you don't need an ice-cream maker...right?  I just invested in a Magimix and usually I just think a food processor is as good as the next food processor.  But I must say, this Magimix is an incredible machine.  This ice-cream was made in no time and was so incredibly silky smooth.  But any processor you have will work, it just might take a wee bit longer to "whizz up".  Enjoy the video below showing you all the steps to make it.  It's not a lot and the outcome is so worth it.

INGREDIENTS
1136g whipping cream - whipped to stiff peaks
700g Bournville dark chocolate - chopped finely
214g cold/room temp water
230g caster sugar
12 fresh egg yolks only (freeze egg whites for meringues or pavlova)
That's it from me folks.  If you do happen to make this ice-cream, please let me know how you get on and what you think of it.  I love that you can just make it and stick it into the freezer without an ice-cream machine or having to bring it in and out of the freezer to agitate the ice crystals.  It's such a set it and forget it type of ice-cream.  But beware, it is sweet and very rich so you don't need a massive bowl of it.
